Day 2/3 - Late Night Baking

For some reason I got the baking bug at about 11pm (!?) and decided to make use of the plums we had gathered the day before as well as trying a frugal flapjack recipe for Jonah (bearing in mind we were planning a packed lunch for the next day.

I found a brilliant Plum Cobbler recipe in the River Cottage Baby & Todddler cookery book which our lovely friend Tina had given us just days before for Jonah's birthday. It was a simple recipe and suitable for all 3 of us so we got to work. Rob prepped all the plums for me (washed, stoned and halved) and then I made the dough topping and baked...










Then I tackled the cheesey flapjack - a recipe given to me by a friend. I say tackled, it was one of the easiest things I've ever made! Oats, grated cheese, grated carrot, melted unsalted butter and 2 eggs all mixed together, spread over a baking tray and baked for 25mins. Such a success!
